Dr. Cochachin Carrera is a food safety scientist, regulatory expert, and university educator with over 20 years of experience across government agencies, industrial operations, and academic institutions in Canada and Latin America.
She holds a PhD in Food Engineering, a Master's degree in Food Microbiology, and formal certification as a Lead Auditor in HACCP, ISO 22000, and ISO 9001 — the international food safety management standards that underpin regulatory frameworks across Canada and worldwide.
At Peru's Ministry of Health — Directorate of Food Safety, she served as Lead Coordinator of the National Committee on Food Additives under the Codex Alimentarius Commission, the international body whose standards Health Canada directly references. In this role she participated in the development and review of national and international food safety standards, and in the standardization of food surveillance and inspection procedures.
She also served as Head of Quality Control at Grupo Gloria / Soprole — one of South America's largest dairy multinationals — overseeing physicochemical, microbiological, and organoleptic analysis across full production lines, and maintaining HACCP systems for products including UHT milk, evaporated milk, butter, fresh cheese, and yogurt.
As a university educator, she has taught food microbiology, food quality control, food safety standards, and sensory analysis at five institutions including Universidad Le Cordon Bleu, Universidad Nacional Mayor de San Marcos, and Universidad Peruana Unión. Now based in Canada with a WES-assessed credential, she brings that internationally recognized expertise directly to Canadian food service learners.
