Module 01

Introduction to Food Safety

  • Foodborne illness — causes, symptoms and high-risk groups

  • Food safety culture in the workplace
Module 02

Basic Food Microbiology & Food Hazards

60–75 minutes
  • Types of microorganisms: bacteria, viruses, parasites, moulds
  • Common pathogens: Salmonella, E. coli, Listeria
  • The FATTOM concept and microbial growth conditions
  • Temperature Danger Zone and cross-contamination
  • Biological, chemical and physical food hazards

Personal Hygiene & Illness Reporting

  • Proper handwashing technique and when to wash
  • Correct use of single-use gloves
  • Illness reporting and exclusion from food handling duties
  • Uniform and personal cleanliness standards

Time & Temperature Control

  • Safe use and storage of cleaning chemicals
  • Pest prevention, waste management, and common signs of activity
  • Allergen management and cross-contact prevention
  • Sanitation plans, SOPs, food safety records and recalls

Our Online Food Handler Certification is developed to be equivalent in content and level to FOODSAFE Level 1, the standard food safety certification recognized by health authorities across Yukon and British Columbia. PhD in Food Engineering · WES-Assessed Credential · Based in Canada

Dr. Cochachin Carrera brings extensive expertise in food safety regulation, standards development, and food science education built over more than a decade of work in regulatory and institutional environments. She has worked as a Food Safety Officer in public health regulatory agencies, as a Food Safety Specialist overseeing large-scale institutional feeding programs serving hundreds of thousands of people daily, and as a university lecturer in food safety and food microbiology at multiple institutions.

From 2012 to 2016, she served as National Coordinator of the Codex Alimentarius Committee on Food Additives, representing her country at international food standards meetings in Geneva and Rome — the same standards that underpin the Canadian food safety framework. Now based in Canada with a WES-assessed credential, she brings that internationally recognized regulatory knowledge directly to learners in British Columbia and Yukon.
